Instructions

1Mix flour, yeast, and salt in a large bowl. Add warm water and olive oil. Mix until a shaggy dough forms.

2Knead on a floured surface for 8-10 minutes until smooth and elastic.

3Place in an oiled bowl, cover with a damp towel, and let rise for 1 hour (or until doubled).

4Preheat your oven to the highest setting (250°C / 480°F) with a pizza stone or inverted baking sheet inside.

5Divide dough in half. Stretch each piece into a thin round on a floured surface. Do not use a rolling pin.

6Spread crushed tomatoes over the dough, leaving a 2cm border. Tear mozzarella over the top.

7Slide onto the hot stone/sheet. Bake for 10-12 minutes until the crust is golden and cheese is bubbling.

8Remove from oven, top with fresh basil leaves, drizzle with olive oil, and serve immediately.
